Spanish Chorizo is an old traditional sausage that was made before refrigeration was invented hence the sausage was cured, air dried and then smoked.
The cured and smoked sausage would be cut into small slices and added to pasta dishes, fresh salads or just eaten with cheese and red wine.
As time evolved the fresh Spanish Chorizo became popular as a grilled sausage or fried or even precooked.

13.5 Kg Lean Pork Minced
1.5 Kg Pork Back Fat Minced (once only).
Add Spice mix
1.5 Ltrs Chilled Water
Seasoning Contains:
Salt, Phosphate (450), Spices & Herbs, Dextrose,
Sodium sulphite 220.
